Sozai Friends Japanese 'STEAMED BREAD' 蒸しパン

WHAT YOU NEED
[Ingredients]
15g Sugar or alternative sweetener
30g Strawberries
30g Milk or any alternative liquid
50g plain Flour
½ tsp Baking powder
1-2 Strawberries (for chopped pieces)
METHOD
Mash strawberries with sugar and milk.
Add the dry ingredients, mix well with the whisk.
Add the chopped strawberry and mix briefly.
Place into the cupcake cups.
Steam in mid-high heat for 10-12mins.

WHAT YOU NEED

50g Milk for alternative liquid
10g Rice bran oil
5g sSugar
1 pinch of salt or 5g parmesan cheese
50g plain Flour
½ tsp Baking powder
15g cubed Cheese (optional)
20g Edamame beans
Black sesame seeds (optional)
METHOD
Pre-cook edamame beans. (please follow your Edamame cooking instruction of your own)
Place the milk, rice bran oil in a bowl.
Add sugar, a pinch of salt (or parmesan cheese), flour and baking powder. Mix well by using whisk.
Add cubed cheese and Edamame beans, mix briefly.
Place into the cupcake cups.
Steam in mid-high heat for 10-12mins.

Potato masher, forks or hand blender
Bowls
Steamer or a bag pan with lid(you can create your own steamer if you don’t have one)
Whisk
Spatula
Cup cake cases, ramekins to hold the cup cake cases
Small pan (if you have to cook edamame beans)
Cheese grater (if you are grating the cheese)
Chopping board
Knife

The knife skills of Master Suda are amazing, as are his knives. His preparation of the sea eel was a work of art. It was wonderful just to see him at work, though I don't think I'll be trying this at home.
I found the tempura section very instructive. I have never seen, nor read, about making tempura this way before – sprinkling batter into the hot oil before frying the floured and battered vegetables. I think I will try at home now. The results look wonderful.
I really enjoy these sessions as they give an insight into "true" Japanese cookery and to the different styles and skills.
