Join us for a fun Japanese tradition by eating a good fortune EHOUMAKI! It’s a long, uncut sushi roll, traditionally eaten to celebrate the coming of spring in the old lunar calendar. The sushi roll is eaten to bring good luck and wishes. The sushi roll should be served uncut and eaten whole as the length symbolises good luck.
EHOUMAKI must be eaten in one sitting facing a certain lucky direction and in total silence, making this tradition even more unique! This year's lucky direction is South- Southeast. Get ready for your compass!

INGREDIENTS
Making 4 rolls, good to share with 2 people
< Sushi rice >
-200g Sushi Rice
-50ml Sushi Vinegar
*If you don't have sushi seasoned vinegar, make your own. Just mix 4 Tbsp Rice Vinegar + 2 Tbsp Sugar + 1 Tbsp sea Salt.
< Shiitake mushroom condiment >
4 dried / fresh Shiitake mushrooms or any mushrooms
2 tbsp Sake / Water
2 tbsp Soy sauce
2 tbsp Maple syrup, honey or sugar
< Sushi filling examples >
-Cucumber, blanched Green Bean, blanched carrots, Avocado, Mustard cress, Lettuce
-Crab stick, Sashimi grade fish slice, Tuna mayo, Sandwich fillings
-Egg omelet, Pickles, Marinated Tofu, Marinated burdock, etc.. Just be creative!!
*Approx 9cm length sticks and you need 4-7 different sticks to make 1 roll.

Makisu ( bamboo mat )
Bowl & Strainer to wash and drain the sushi rice
Bowl filled the water for wetting your hand and knife
Bowl / lasagne dish / Handai & spatula to mix the sushi rice
Saucepan and the lid to cook the rice, ideally non stick
Knife and chopping board
Cling film
Kitchen towel

Thank you, Master Suda and Sozai for a fascinating Japanese Cookery Lesson today.
The knife skills of Master Suda are amazing, as are his knives. His preparation of the sea eel was a work of art. It was wonderful just to see him at work, though I don't think I'll be trying this at home.
I found the tempura section very instructive. I have never seen, nor read, about making tempura this way before – sprinkling batter into the hot oil before frying the floured and battered vegetables. I think I will try at home now. The results look wonderful.
I really enjoy these sessions as they give an insight into "true" Japanese cookery and to the different styles and skills.
